This Cucumber Gimlet cocktail is offered at the Seaport Hotel’s TAMO Bar & Terrace, and is as refreshing tasting as it looks. Venture to Boston for this ginger and cucumber flavored cocktail, or don’t leave your kitchen and make it right at home!


Cucumber Ribbons

Slice cucumber length-wise on mandolin slicer. Discard the first few slices that have the outer skin.


For the cocktail

  • 1 1/4 Ounce Hendrick’s Gin
  • 3/4 Ounces Ginger-Lime Syrup*
  • 3-4 Ounces Club Soda (depending on glass size)
  • 2 2 cucumber ribbons*

For the ginger-lime syrup

  • 1 Cup granulated sugar
  • 1 Cup water
  • 2 Tablespoons grated ginger
  • 1 Tablespoon grated lime zest

Cucumber Gimlet

* 2 1/2 ounces cucumber-infused gin
* 1/2 ounce lime-flavored simple syrup
* Lime wedge

Combine the gin and lime syrup in an ice-filled cocktail shaker and shake until cold. Strain over ice into an old fashioned glass and garnish with a lime wedge and cucumber slice.

For this recipe, I used a lime-flavored simple syrup from Sonoma Syrup Co. If you’re using Rose’s Lime Juice, well, don’t. But if that’s all you have on hand, you may need to increase the amount a bit. I find the Sonoma Syrups to be a little sweeter and so adjust the amounts down when using them, so adjust them back up if you need to. Your best bet is to start with the proportions above, taste it, and gradually increase the syrup until you reach the desired sweetness.

This is the first drink I made with my recent batch of homemade cucumber-infused gin. Cucumber has a subtle flavor, so it’s best used in drinks like this that don’t contain other overpowering ingredients.

Observant readers will notice that I finally got some nicer glassware. I decided against the break-resistant crystal glasses I discovered at Barkeeper in LA they’re nice, but they’re just too expensive. Those start at about $6 a glass and go up from there, while the glasses pictured came in a set of six, plus six matching 16oz glasses, for something like $16 at Target. If that makes me a cheapskate, so be it I’d have to break quite a few of these before the break-resistant ones would make financial sense.

What Is A Gin Gimlet?

A gin gimlet is a classic cocktail made from, yep, gin and fresh lime juice. The ratio is typically 2 parts gin to 1 part lime juice with some simple syrup added to cut down on the tart lime juice.

Simple syrup is a 50/50 ratio of sugar to water that&rsquos been boiled until the sugar completely dissolves. This makes adding a little sweetness to your drink easier than adding sugar that doesn&rsquot quite dissolve. BUT you can get yourself superfine sugar at the store that dissolves pretty well in drinks as long as you shake it or stir it enough.

Why is it called a ‘Gimlet’?

There are a number of theories about how the cocktail got its name. One idea is that it was named after the gimlet, a small tool used for drilling holes. According to Difford’s Guide, this name might have evolved because the tools were used to open liquor barrels on the ships.

Another story says that a doctor by the name of Thomas Gimlette was the inventor of the drink. This earliest Gimlet was a more enjoyable way to consume the acidic lime juice that was prescribed as a daily anti-scurvy medicine. And who doesn’t love a little gin with their daily dose of vitamin C!

Cucumber Gimlets

Slice four 1/4-inch-thick slices from 1 cucumber. Peel and coarsely chop remaining cucumbers transfer to processor and purée until smooth. Pour through fine strainer set over large bowl, pressing on solids in strainer. Discard solids in strainer.

Step 2

Mix 1 cup cucumber juice, gin, lime juice, and sugar in pitcher stir until sugar dissolves. Add ice mix well. Immediately strain mixture into 4 small Martini glasses. Garnish with lime and cucumber slices and serve.

Black Cherry Cucumber Gimlet

Fall is here and the holidays are right around the corner. I’m so excited! Y’all…it has been pretty hot here in the south, but I think we’ve finally caught wind (pun intended) and got the memo that the season is officially changing! You all know how much I love this time of year. For one, it’s my absolute FAVORITE season and I’m ready to get festive.

Sparkling Ice is one of my favorite beverages, because it can be enjoyed throughout every season. I’m super excited that Sparkling Ice has a Pink Variety Pack which includes four fun flavors: Black Cherry, Peach Nectarine, Coconut Pineapple, and Pink Grapefruit. I was able to stock up so I could have a variety of flavors to create fun recipes for the holidays.

It has been a minute since I created a fun, seasonal drink — but I must admit, this may be my new jam! I know …I say that every time. I have a little hack for you all. This my friends is a Black Cherry Cucumber Gimlet. There is something about black cherry that gives me holiday celebration vibes. In addition, the cucumber gimlet is one of my favorites drinks, because it tastes so refreshing.

This can be made as an adult beverage (disclaimer: for those 21 and older AND who drink responsibly) — and it can also be prepared as a mocktail! That’s the beauty of it! So ladies…whether you’re with your bestie who is preggers or if you’re hanging out with the fellas watching football, this is fizzy favorite that everyone can enjoy!

Sparkling Ice comes in a variety of delicious flavors and it adds excitement to plain water. It has vitamins, antioxidants, and it’s made with zero sugar, zero calories, and natural colors and flavors. This makes it a great addition to your gatherings and holiday festivities! Might I add, the Black Cherry flavor mixes so well with gin. Hendrick’s Gin is my favorite.

Cucumber Basil Gimlet

A refreshing cocktail made with fresh cucumber juice.


  • 1 cup Sugar
  • 1 cup Water
  • 10 whole Basil Leaves
  • 1 whole English Cucumber
  • 3 ounces, fluid Gin
  • 1 ounce, fluid Lime Juice


In a pot, combine 1 cup sugar with 1 cup water and 10 basil leaves. Bring the mixture to a rolling boil until the sugar is dissolved. Remove from heat and let the basil infuse for 20 minutes and until the mixture has cooled. Strain out the basil and set the simple syrup aside.

Peel a large English cucumber and cut it into chunks. Place it into your food processor or blender and pulse for 2 minutes. Remove mixture and place it into a fine mesh strainer and push out the juice into another bowl. Discard whatever cannot be pushed through the strainer into the juice. Set juice aside.

In a cocktail shaker, combine 1 ounce of basil simple syrup, 1 ounce cucumber juice, 3 ounces gin, 1 ounce of lime juice and ice cubes. Shake, shake, shake, and taste. If it’s too strong, add 1 more ounce of basil simple syrup. Shake again and serve over ice.

Zesty Cucumber Gimlet



  • 4 cups roughly chopped Persian cucumber*
  • 2 limes, quartered
  • the juice of 1 lemon
  • 6 oz simple syrup*
  • 8 oz gin
  • 36 oz (4 1/2 cups) blackberry-cucumber flavored seltzer water*



I used Persian cucumbers for this recipe, but English seedless cucumbers would also work well.

I make my own simple syrup for this recipe, by bringing equal parts sugar and water to a boil, and then stirring until the sugar is dissolved. Once cool, I store it in the fridge for weeks in an airtight container (I actually use a squirt bottle or ease of use). You can also purchase simple syrup at most grocery stores.

I used blackberry lime flavored seltzer for this, but you could also use cucumber seltzer.

A Classic Gimlet Cocktail with a Refreshing Cucumber Twist

No offense to Marlowe, but at Cleveland’s Society Lounge, you won’t find a bottle of Rose’s. The bar makes every item from scratch, other than the liquor itself.

For the bracing Cucumber Gimlet, one of the bar’s signature drinks, lime juice and simple syrup create a sweet, tart backdrop that’s freshened by muddled cucumber. It’s not the 50-50 proportion that Marlowe preferred, but he was a better gumshoe than bartender.

But today I am feeling a bit creative. So I am transforming the classic Gimlet with a bit of mint simple syrup and cucumber infused gin into a Cucumber Gimlet. I’m serving mine over rocks. Which both lightens it and makes it a super summery cocktail– ideal for poolside entertaining in some warm weather location like say, Palm Springs. Which is where I am and what I happen to be doing at the moment. GREG

  • 2 1/2 c thinly sliced cucumber, plus more for garnish
  • 4 1/2 c gin
  • 1 c sugar
  • 1 c water
  • 1 c mint leaves, lightly packed plus more for garnish
  • 2 1/4 c fresh lime juice
  • lime slices and/or cucumber slices as garnish

Steep 2 1/2 cups cucumber slices in 4 1/2 cups gin, covered and chilled for at least 8 hours and up to 4 days. Strain store indefinitely in the refrigerator.

Heat 1 cup sugar and 1 cup water over medium-high heat, stirring until dissolved. Add 1 cup mint leaves remove from heat. Cover steep 30 minutes to 1 hour. Strain discard mint. Refrigerate up to 2 months.

In a 2‑quart pitcher, stir gin, simple syrup and lime juice. Refrigerate.

To serve, pour individual servings into a cocktail shaker filled with ice, shake vigorously, and strain into an ice-filled double old-fashioned glass. Garnish with cucumber and/or lime slices and mint. Repeat for additional cocktails.
